ナシゴレン

ナシゴレン（インドネシア語・マレー語: nasi goreng）は、インドネシアおよびマレーシアの焼き飯料理である[1]。日本の食品メーカーによってインドネシア風チャーハン[2]と称されることもある。

概要

インドネシア語で、nasi は「飯」、goreng は「揚げる」の意味である[3]。インドネシアの国民食[4]であると同時に、CNNによってWorld's 50 Most Delicious Foodsに選出[5]された料理である。

現地では代表的な料理であり、具や調味料を変えたさまざまなバリエーションのものが作られる。見た目は日本で見るチャーハンとあまり変わらないこともあるが、主な特徴は、サンバル、ケチャップマニス、トラシもしくはブラチャン[6]など現地特有の調味料を使うこと、ニンニクや唐辛子（サンバルに入っているものも含む）を使うことなどが挙げられる。動物性の食材としては鶏肉、牛肉、エビなどが使われることが多いが、豚肉に関してはムスリムの多い両国では、ヒンドゥー教徒が多いインドネシアのバリ島などを除きあまり使われることはない。

つけあわせ

皿に盛るときにたいてい、多めの油で片面焼きした目玉焼き、クルプック（エビ味などの揚げせんべい）、生のキュウリとトマトが添えられる。また別の小皿もしくは同じ皿に、好みで味を調整するための少量のサンバルが用意される。ただし現地の露店（ワルンなど）の場合目玉焼きなどは付かず、これらが付いたものは「nasi goreng istimewa」や「nasi goreng special」（特別ナシゴレン）として区別されることが多い。
